Easy Slow Cooked Beef Shank Recipe (Fall Apart Tender)

Beef shank becomes one of the most tender, flavorful cuts when cooked properly—low and slow. This ossobuco recipe is great for those on a paleo diet, low-carb diet, keto diet, seed oil free diet, or animal-based diet (but can and should be enjoyed by anyone)!

What should I serve the beef shank with?
This recipe makes a great meal on its own, but depending on your diet preferences, you can add to it or adjust. You can eat it like a soup or even thicken it with a flour slurry.
We love serving shank over some white rice. You can also add in chopped potato (I'd recommend Yukon gold) about 1.5-2 hours before the cook is done.
The meat tastes amazing with homemade sourdough bread.
It's a very versatile recipe—feel free to experiment and add in other herbs, veggies, aromatics, etc. The most important thing is that you keep the beef hydrated and cook it low and slow so the connective tissue breaks down enough to become tender.
What brand of bone broth do you recommend?
I'd highly recommend FOND bone broth if you don't have homemade broth. The quality truly is unmatched! For this recipe, I always use their beef tomato and thyme broth—it adds the perfect flavor to the meat.
How do you reheat leftovers?
I recommend reheating them in a small pot on the stovetop on low heat, using a bit of beef tallow if needed! This recipe is great for meal prepping.
