This recipe was originally inspired by Freshly Milled Mama's cookie recipe. After experimenting in my own kitchen, I've adapted it to work with freshly milled einkorn flour and made it completely dairy free.
You might be surprised to see a cookie recipe on my blog, as I’ve eaten mostly “animal-based” for years. Typically, when I make desserts, I like to use refined-sugar-free options. In fact, I was 100% refined sugar free for many years!
But now that I’ve reached a certain point in my healing journey, I don’t mind enjoying a true treat here and there. I still prefer desserts sweetened with raw honey or maple syrup most of the time, but I feel just fine using organic cane sugar, too.
I recently discovered the benefits of using freshly milled flour and have been experimenting with einkorn—and I’ve been loving it! These freshly milled einkorn chocolate chip cookies have quickly become such a fun treat in our house.
They’re made with freshly milled einkorn flour and simple ingredients, and my version is completely dairy free. I hope you enjoy them as much as our family does!
How do you store your cookie dough?
Personally, I like to flash freeze the portioned cookie dough balls on a baking sheet, then transfer them to an airtight freezer-safe bag once they’re completely frozen. They should keep well in the freezer for up to 6 months.
This is our favorite way to store cookie dough because you can bake just a few cookies at a time, straight from frozen. I actually find that they taste even better this way!
Can I use other types of wheat berries for this recipe?
This recipe is specifically meant for freshly milled einkorn flour, but you're welcome to experiment with other types of wheat! Just keep in mind that different varieties of wheat absorb moisture and behave differently when baking, so you may need to adjust the amount of flour to get the right cookie dough consistency.

Are these cookies refined sugar free?
No, they are not. Most of my recipes are refined sugar free, but I’ve found that cookies can be tricky to get just the right texture without cane sugar! I’m convinced it’s possible, though—so stay tuned. :)
Are these cookies gluten free?
No, these cookies are not gluten free. Einkorn is an ancient variety of wheat, and it does contain gluten.
However, there are many anecdotal stories from people who find they tolerate einkorn or freshly milled flour differently than conventional wheat.
