Paleo Dark Chocolate Recipe | Refined Sugar Free, Dairy Free, & Seed Oil Free

Here's how to make the most delicious paleo chcoolate! This recipe is great for those on a paleo diet, gluten free diet, dairy free diet, seed oil free diet, or low carb diet (but can and should be enjoyed by anyone).

When made with real, clean ingredients chocolate can actually be a nourishing food! Not only is this homemade chocolate better for your health, but it tastes better too. It will quickly become your new favorite treat. I hope you enjoy this recipe as much as my family and I do!

Why do you have to store the chocolate in the fridge?


Because it's made with coconut oil, it needs to be stored in the fridge. It will start to melt if kept at room temperature too long.


Can I use cocoa butter instead of coconut oil?


Yes, absolutely! If you do this, the chocolate should be okay to keep room temperature. Personally I prefer the taste of the coconut oil, but both are great options!



Why use cacao powder instead of cocoa powder?


Cacao powder is less processed than cocoa powder. Both have a similar taste and you can use either. I did some research on different brands of cacao powder, and the one I chose is called Viva Naturals. It's organic, has a great taste, and is low in lead.


Are there any chocolate brands that have clean ingredients?


Yes, there are a few brands of chocolate that have great ingredients:



These are great if you're looking for a special treat and don't want to make the chocolate yourself. Honey Mama's is sweetened with raw honey and has all organic ingredients. They are paleo, gluten free, soy free, refined sugar free, etc.


Can I add toppings and flavors to this recipe?


Of course! Personally I love adding some peppermint extract (a little goes a long way) and some cocoa nibs to add a nice "crunch" to the chocolate. You can also add in some dried raspberry or even nuts. Get creative with it!


How long do they keep fresh in the fridge?


They should be good for at least several weeks, but they're unlikely to last that long (since they taste so good). All the ingredients are shelf stable so I can't imagine them going off very quickly. You'd know if they went off.

Is there a low carb sweetener option that you could use instead?


Yes, you could try using allulose or stevia. Personally I don't love the taste of zero carb sweeteners like allulose or stevia, but if you enjoy them it may be worth a try!

First up, we have a reference 5500 Explorer. At first glance, it's got what you'd expect from link a vintage Explorer, such as a mid-'60s reference 1016: The three 3-6-9 gilt dial, the three stacked lines reading Rolex / Oyster Perpetual / Explorer, the Mercedes hour hand and link lollipop seconds. But it's a bit smaller, 34mm to be precise. And the word Precision graces the lower half of the dial as link it is not a chronometer.
