If you're looking for a healthy mexican chicken recipe, you're in the right place! This recipe is great for those on an animal-based diet, low carb diet, keto diet, or seed oil free diet (but can and should be enjoyed by anyone).
My family loves Mexican food, and we wanted to find ways to make some of our favorite dishes with cleaner ingredients. Most chicken recipes we looked at contained artificial ingredients (such as using packaged dressings or seasoning mixes) or inflammatory seed oils (such as canola or soybean oil).
We did lots of experimenting to make our recipe taste great with real, nourishing ingredients. I hope you enjoy this chicken as much as we do!
